We made Homemade Ratatouille

Diya and I have been craving some ratatouille this past month, particularly because we have had so many veggies lately, and it has been getting cold throughout the evenings. We found a great recipe here, and were looking forward to trying it!

We ended up using way too much tomato sauce for a typical ratatouille, since some of the measuring was a bit vague, but it was still incredible, and nice and hot!

Looking back, it's clear we used a bit too much tomato sauce, and ended up with something more akin to our pasta sauce, but without the pasta. But overall, the dish was a delicious success!
